Do you remember the days when the lunch bell rang, signaling the excitement of discovering the treasures hidden in your lunch box? Join me as I take a trip down memory lane, revisiting some items—some I’d rather forget—and the iconic snacks and treats that fueled my childhood adventures and satisfied my youthful cravings.

Growing up, I preferred school-provided lunches because my mom and dad insisted on all-natural, healthy foods at home. School lunch was my chance to eat something different. Although I often packed my lunch because it was cheaper, my favorite thing to find in it was a peanut butter and honey sandwich.

If I could create one school lunch item from scratch, it would be the chocolate chip cookies. The ultimate school lunch menu should feature a salad bar with all the fixings and rotating hot foods.

From Balanced Meals to Nostalgic Treats

My tricks for making the ultimate lunchbox meal include keeping a frozen water bottle in the insulated lunch box to maintain cold temperatures and using a Stanley thermos to keep hot foods piping hot. To ensure a well-balanced and nutritious meal, I always include protein, dairy, healthy fats like avocado or nuts, grains, fruits and vegetables, and something sweet. Packaging is key—heavier items should be strategically placed at the bottom.

Delicious wedge salads topped with crispy bacon, crumbled cheese, red onions, and a sprinkle of herbs, creating a vibrant and flavorful presentation.

I’d love to see kimchi pancakes for a breakfast box, and for a dinner box, fresh spring rolls and a smoked salmon platter would be perfect.
